Course Description:

This course is designed to upgrade and broaden the knowledge and skills of Chief Cook, Chief Steward, 2nd Cook and Messman in Bread Baking and Cake Making on-board. The instructions will cover the Basic Bread and Cake Ingredients, Baking Equipments, Units and Measurement, Baking Process, Bread Baking Procedure, Faults and the causes of Bread Baking, Cake Mixing Method, Baking and Cooling Procedure and Faults and the cause of Cake Baking.

The modules enumerated below shall be given appropriate time allocation both for lecture or theoretical preparation in a compiled handbook and for practical application of the competencies guided by recipes are demonstrated in the galley.

Candidates: Open for messman, 2nd cook, chief cook, chief steward. with a minimum numbers of                      (5) participants and with a maximum numbers of (10) participants.

Course Duration: 2 Days (12 hours) / 3 Days (18 hours)
